This month we focus on the Windfall Wines Cabernet Sauvignon 2007. This wine is cultivated in deep red, fertile Karoo soil. Irrigation can be below normal due to the excellent hygroscopicity of the soil. Vine canopies protect the grapes against direct sunlight and the grapes produce fruity to cherry flavours. Those clusters which ripen slower are removed beforehand for the remainder to develop a full flavour.
Cabernet Sauvignon prospers here because of the warm soil and the cool air, which plays over the vineyards after sunset. These two elements are building blocks for exceptional Cabernet Sauvignon.

Windfall Cabernet Sauvignon is a medium full wine with excellent maturing characteristics, for example quality cork, high extract capacity, ideal balance between ph and acid and sufficient alcohol content.
The medium fullness this wine provides enhances the food flavours. The wine is also good company for venison dishes, from small game like bushpig up to larger game like kudu and Cape oryx as well as olives, ripe cheese and pizza. |
